It is with heavy hearts that we announce the passing of Ethel Carson. She left this world peacefully at the age of 88 on September 28, 2026, at Woodstock Hospital. In her final hours, she was surrounded by the love and presence of her family.
Ethel was born on November 4, 1937, in Hungary, to Julia and Lesley Schmidt. At the age of 14, she courageously emigrated to Canada, where she built a life marked by resilience, love, and dedication to family, friends, and community. Ethel married the love of her life, John Carson, in 1958, and together they built a bountiful life, raising their two children, Jeffrey and Michelle. Ethel and John shared a love of dancing and were admired for their grace and devotion to one another. Ethel was renowned for her delicious baking, needle work, and gift for entertaining. She took great pride in her home and cherished the beautiful flowers in John’s meticulous gardens, but her greatest joy was always her family, especially her children and grandchildren.
She worked for many years alongside one of her dearest friends at the Dairy Capital Cheese Shop, where she became known for her delicious cheese trays, warm hospitality, and welcoming smile. A woman of strong faith and community spirit, Ethel was an active and devoted member of the Catholic Women’s League at St. Mary’s Church in Woodstock. She touched many lives through her kindness, generosity, and genuine interest in others, leaving behind a legacy of love fondly remembered by all who knew her.
Ethel is survived by her children Jeffrey Carson (Kate Rapson), Michelle Sipley (Mike Sipley), and her grandchildren Teia Sipley, Olivia Carson, and Nicole Carson, by her sisters, Mary Pike (Calvin Pike) and Emma Balsas (Almantas Balsas), brother-in-law Joe Einreinhoffer, and many nieces and nephews. Predeceased by her husband John Carson, her mother and father Julia Krabacz and Lesley Schmidt, step-father Steve Krabacz, brother George Schmidt, and sister-in-law Helen Schweighardt.
A funeral Service will take place on Thursday October 8, 2026, at 1 p.m. at Holy Trinity Parish, 1420 Devonshire Ave., Woodstock, Ontario. A luncheon will follow the funeral Service. The family requests donations in memory of Ethel be made to the Woodstock Hospital Foundation.
